Spicy Asian Carrot Salad
Salad Ingredients š„
- 3 carrots, peeled
- 1 small zucchini
- 1 small orange
Dressing Ingredients
- 1 fresh chili pepper (optional), minced
- 1 garlic clove, minced
- 1 tbsp crushed dried dulse (applewood smoked, if available)
- 1 orange špeeled and juiced. Reserve the smashed orange sections.
- 1 tbsp rice vinegar
- 1 tbsp coconut aminos
- 1 tsp sesame oil
- 1/4 tsp agave
Optional Garnish
- Sesame seeds
Method
- Combine dressing ingredients in a small bowl. Set aside.
- Using a vegetable peeler, shave the carrots and zucchini into ribbons over a large bowl to combine.
- Dice the leftover orange sections and add to the bowl of veg.
- Add the dressing and toss to coat.
- Garnish with sesame seeds.
