Spicy Asian Carrot Salad

Salad Ingredients šŸ„•

  • 3 carrots, peeled
  • 1 small zucchini
  • 1 small orange

 

Dressing Ingredients

  • 1 fresh chili pepper (optional), minced
  • 1 garlic clove, minced
  • 1 tbsp crushed dried dulse (applewood smoked, if available)
  • 1 orange šŸŠpeeled and juiced. Reserve the smashed orange sections.
  • 1 tbsp rice vinegar
  • 1 tbsp coconut aminos
  • 1 tsp sesame oil
  • 1/4 tsp agave

 

Optional Garnish

  • Sesame seeds

 

Method

  1. Combine dressing ingredients in a small bowl. Set aside.
  2. Using a vegetable peeler, shave the carrots and zucchini into ribbons over a large bowl to combine.
  3. Dice the leftover orange sections and add to the bowl of veg.
  4. Add the dressing and toss to coat.
  5. Garnish with sesame seeds.
