Herbed Ravioli with Roasted Banana Peppers & Kalamata Olives

Ingredients

  • 1 package fresh vegan ravioli of choice
  • 6 large banana peppers, sliced into chunks
  • Scant handful of fresh basil
  • Scant handful of fresh chives
  • 1-2 sprigs fresh oregano
  • 2-3 tbsp sliced Kalamata olives
  • Avocado oil spray + 1 tbsp oil of choice
  • Salt
  • Vegan Parmesan — optional garnish

Method

  1. Lightly spritz the peppers with avocado oil, then sprinkle with salt to taste. Roast or air-fry them @ 450 degrees for about 8 minutes until done to your liking.
  2. While the peppers roast, cook the ravioli per package directions, usually in boiling water for 6ish minutes.
  3. Meanwhile, mince the fresh herbs, place into a large bowl, add the olives and drizzle 1 tbsp oil of choice.
  4. Drain and divide the ravioli between 2 bowls. Turn the peppers into the bowl of herbs and toss to coat, then spoon them over the ravioli. Sprinkle with optional garnish and enjoy!
