Herbed Ravioli with Roasted Banana Peppers & Kalamata Olives
Ingredients
- 1 package fresh vegan ravioli of choice
- 6 large banana peppers, sliced into chunks
- Scant handful of fresh basil
- Scant handful of fresh chives
- 1-2 sprigs fresh oregano
- 2-3 tbsp sliced Kalamata olives
- Avocado oil spray + 1 tbsp oil of choice
- Salt
- Vegan Parmesan — optional garnish
Method
- Lightly spritz the peppers with avocado oil, then sprinkle with salt to taste. Roast or air-fry them @ 450 degrees for about 8 minutes until done to your liking.
- While the peppers roast, cook the ravioli per package directions, usually in boiling water for 6ish minutes.
- Meanwhile, mince the fresh herbs, place into a large bowl, add the olives and drizzle 1 tbsp oil of choice.
- Drain and divide the ravioli between 2 bowls. Turn the peppers into the bowl of herbs and toss to coat, then spoon them over the ravioli. Sprinkle with optional garnish and enjoy!
